    Complete oxygen control

    Prevent oxidation and contamination, with anaerobic aging without oxidative or reductive notes.

    Studies have shown that the majority of oxygen ingress in traditional barrels occurs through the stave joints and the bung hole. Two key factors influence oxygen permeability — the quality of the stave joints and the unequal distribution of the pressure between staves created by the hoops along the barrel.

    The Infinity barrel's special joint design and pressure-adjustable hoops, eliminate uncontrolled oxygen exposure.

    Accelerated aging

    Studies show 3 to 4 times faster aging time due to the polymerisation uninterrupted with SO2.

    Internal and independent scientific studies and experiments, and field experience by winemakers using Infinity Technology, have proven that winemaking in Infinity barrel results in three to four times faster aging, comparing to conventional winemaking processes using traditional barrels.

    The oak environment without O2 and SO2 presence enables much faster phenolic compounds polymerisation and integration.

    Sulfite-free winemaking

    No SO2 and no oxidation risk. You can have it both.

    What hasn’t been possible before is to have a wooden fermenting vessel able to maintain close to zero oxygen environment. Regular wooden barrels require sulphites addition, while Infinity secures there is no oxidation, no contamination, and no evaporation.

    It is the only wooden fermentor making it possible to ferment, and age wine without any preservatives and additives.

    In traditional barrels, opening the bung presents a major vulnerability. Sample, monitor the pressure, introduce the inert gas, and stir the lees without opening the bung.
